1 3/4 cups raw peanuts
1 cup sugar
½ cup light corn syrup
¼ tsp. salt
1 ½ Tbsp. butter
1 tsp. baking soda
1.5 tsp. vanilla extract
Combine peanuts, sugar, corn syrup and salt in Dutch oven, cook over low heat stirring gently until sugar dissolves. Cover and cook over medium heat 2--3 minutes to wash down sugar crystals from side of pan. Uncover and cook stirring occasionally to hard crack stage (300 degrees on candy thermometer). Stir in butter, soda, and vanilla. Pour into buttered 15 inch x 10 inch x 1 inch jelly roll pan, spreading thinly and let cool. Break into pieces. Yields 1 pound.
Fun party idea: Tomahawk Brittle – present the peanut brittle in large pieces on a wooden cutting board, place a small tomahawk or wooden mallet out for the guests to break off their own brittle….lots of fun!
